Question: Does anyone have a good vegetarian pasta recipe?
I’m looking for a vegetarian pasta recipe so I can bring it to the family dinner for thanksgivings. Any type of Pasta is fine. Anything involving mushrooms would be excellent! I have looked at several sites and can’t find the right thing. Any and all comments regarding a vegetarian recipe for Thanksgiving are greatly appreciated! Oh, and please NO TOFU recipes. (I love it but I would be the only one at the dinner eating it :/ ) Thanks!

classico sun dried tomato is awesome with ravioli
prego is vegetarian.
ingredients
Tomato Puree (Water, Tomato Paste), Diced Tomatoes In Tomato Juice, Vegetable Oil (Corn and/or Cottonseed and/or Canola), Dehydrated Garlic, Dehydrated Onions, Onion Powder, Spices (Basil, Oregano, Spice), Citric Acid and Dehydrated Parsley.

My sister has allergies so she went vegan. I want to make a grilled pepper and squash garlic pasta dish but she can’t have butter or cream, she is allergic to dairy products. Please help.

fire roasted red peppers

onion
garlic
chop up and put into oven at 400 for 30 min till its crispy.
take out and mix with pasta
add oregano, rosemary, salt, pepper and yer done
drizzle with some lemon juice if you like

Puttanesca is good. You can leave out the anchovies. Add marinated artichoke hearts for a twist.

Creamy Pasta Salad With Artichoke Hearts
This is no ordinary pasta salad. It’s got (artichoke) heart and soul, and will add zest to any luncheon.
1/4 cup vegan mayonnaise
2 Tbsp. lemon juice
2 cups cooked pasta (elbow, rotini or small shells)
4 green onions, chopped
1 6-oz. jar artichoke hearts, drained and sliced
1 1/2 Tbsp. fresh or 1/2 Tbsp. dried basil
1/2 tsp. salt
• Stir the mayonnaise and lemon juice into pasta. Add the green onions, artichoke hearts, basil, and salt and mix well.
• If the salad is too dry, add more mayonnaise and/or lemon juice.
< Makes 4 servings

Pasta Salad
A simple and flavorful garlic vinaigrette makes this pasta salad perfect for picnics and barbecues.
For the Garlic Vinaigrette:
2 Tbsp. red wine vinegar
2 garlic cloves, minced
1/3 cup olive oil
1/2 cup fresh basil, chopped
9 oz. fusilli pasta
2 bell peppers (red and yellow)
1/2 cup nondairy Parmesan cheese shavings
Salt, to taste
Freshly ground pepper, to taste
1/4 cup toasted pine nuts, optional
• Mix all the ingredients for the vinaigrette and let stand for 30 minutes.
• Cook the fusilli al dente. Drain the pasta then cool immediately under cold water. Drain well and set aside.
• To roast the peppers, place in a hot oven, turning occasionally, until evenly blistered and charred on all sides. Set aside until cool enough to handle. Slide the skin off and scrape out the stem, seeds, and ribs. Pat the flesh dry. Cut into thin strips.
• Mix the pasta, peppers, and “cheese” together. Whisk the vinaigrette thoroughly and toss into the salad. Season with the salt and pepper to taste.
• Cover and let stand for 3 to 4 hours. Serve at room temperature, sprinkled with pine nuts if desired.
Makes 4 servings

Question: Is it weird to make pasta and vegetarian meatballs for first time dinner guests?
We had a couple over for dinner for the first time tonight and I asked them beforehand what they do not eat and they said Pork and Veal. So I decided to make pasta and vegetarian meatballs because I personally am not a huge fan of meat and my husband eats anything. Now, would you think that people you go to dinner to, and they surprise you with pasta and vegetarian meatballs (versus real meatballs) are weird people?
They are NOT vegetarian.

Greek Pasta Salad
Ingredients:
1 pound rotini or penne pasta
3/4 cup olive oil
2 tablespoons fresh lemon juice
2 garlic cloves, minced
Salt and pepper to taste
4 roma tomatoes, seeded and chopped
1 small cucumber, peeled and seeded (if seeds are coarse)
1/3 cup chopped red onion
1/4 cup chopped Italian parsley (flat leaf)
6 ounces feta cheese, crumbled
2/3 cup whole Greek olives
Cook pasta, rinse and drain; set aside. Whisk together olive oil, lemon juice, garlic, salt and pepper in small bowl. Set aside.
In large salad bowl, combine all remaining ingredients with pasta. Toss well to distribute. Add as much dressing as desired to moisten pasta. Cover and refrigerate at least two hours before serving to allow flavors to blend.

I used to enjoy meatballs with sauce and pasta. But now that I am vegetarian, can anyone of you recommend good, tasty vegetarian substitutes to use instead of meatballs? Thanks in advance!
Thanks for all the great answers so far! I must clarify, though, that I don’t get soy meatballs where I live. (Besides, do soy meatballs taste good? If so, which brand?) So, I’d prefer a meat substitute that’s readily available.

You could try some mushrooms or you can buy those little packages of mozzarella and mushroom breaded pieces and try putting them in your spaghetti or you could just use really hearty tomatos. You could even use the replacement kind but those don’t always taste so well.
